Valle Eatery & Bar
Valle Eatery & Bar is located inside the new Hilton Garden Inn in Lompoc. Unlike the quintessential H.G.I. restaurants, it is an independent concept and the result of a collaboration with a local Lompoc chef and is designed to highlight the generous bounty of fresh produce and ingredients found on the Central Coast.
The menu includes a broad range of cultures to bring fresh, forward flavors to both the Lompoc community and the hungry traveler. Beverages include handcrafted, seasonal cocktails made from local ingredients along with local wines and beers on tap.
The new Hilton Garden Inn features 156 contemporary and spacious rooms along with an expansive ballroom with over 3,000 sq. ft. of event space.
Executive Chef Conrad Gonzales
Executive Chef Conrad Gonzales is a native of Santa Barbara County who grew up in Lompoc. He worked his way up the restaurant line and launched his own catering company, Valle Fresh. The business flourished and Valle Fresh became an overnight sensation in the local community. “When I started this business, I wanted to put food first,” he explains. During that time, Chef Conrad began forging his relationships with local farmers and artisans. “I like to be creative and not just stick to one area of cuisine,” he says. His creativity shows on the plate, he uses food as his medium to craft vibrant, stunning dishes to tease the palate and enjoy with the eyes first. He describes his cuisine as Californian — gathering inspiration from local producers and our state’s melting pot of cultures.
“California style, to me, means I can use a little Indian, I can use a little Korean, I can use a little Mexican. I can use the French techniques in the sauces and braising, but also come up with a fresh, vibrant approach.”
Chef Ofelio Flores
Chef Ofelio Flores worked in the kitchen with his mom and grandma growing up and fell in love with cooking. His formal training includes the Gordon Blue San Francisco California Training, C.I.A. St. Helena and the C.I.A. Hyde Park New York. Chef Ofelio moved to New York at age 22 and worked his way up through every position in the back of the house.
After New York, he moved to California where he worked as the Executive Chef at the Marriott in Buellton. He has considerable experience in executing large events and banquets, and is always calm and focused under pressure.
Chef Ofelio takes great pleasure in preparing dishes for his guests and is always seeking new ideas that continue to impress with unique flavor combinations. He prefers to focus on fresh, organic ingredients using basic techniques which feels make the best food. As a testament to his skill in delicious comfort food, Chef Ofelio is the proud winner of the Buellton Wine & Chili Festival for the last 7 years in a row!
Food & Beverage Director Alex Martinez
Mixologist Alex Martinez has worked together with Chef Ofelio for the last 13 years. He has over a decade of experience managing restaurants and training a dedicated hospitality team to deliver the utmost level of service. He’s motivated to please and will always go the extra mile to exceed his guests’ expectations.
Alex takes great pride in crafting seasonal cocktails using fresh, house-made ingredients from local farmers and partners with local distilleries to source many of their spirits. All syrups and juices are made from scratch and each cocktail is thoughtfully prepared by Alex and his team to deliver only the highest quality drinks made with care.
